Crostini are thin slices of toasted or grilled bread. Usually they carry toppings. Crostini can be flavored by garlic or by salt, among other flavors. Usually a baguette is thinly sliced. The baguette can be store-bought or self-baked. If you like to make it yourself, follow the recipe for ciabatta up till the shaping. Keep baking times to around 35 minutes until the crust is golden.

The art of making crostini

To form the crostini, slice a baguette at a slight angle to create oblong slices. You can also start off from a frozen, sliced baguette. The slices are brushed with a vegetable oil and flavored with salt, spices or some garlic. Always watch the grilling or toasting as color formation may happen in tens of seconds. The result is a flavorful, crispy, crunchy base for any topping you may prefer. Goes well with hummusbaba ganoush and many other spreads.

  • 3 tbsp olive oil
  • 2 baguettes

Instructions
 

crisping up the sliced bread

  • preheat the oven to 250 C
  • Slice two store-bought or self-produced baguettes into slices, slightly at an angle to create oblong slices (you can use less, depending on how much you want to make)
  • coat the slices on each side with some olive oil using a brush
  • Optionally sprinkle some sea salt on one side
  • Place the coated bread slices on a tray and grill them in the top part of your oven first 4 minutes on one side and then turn and another two minutes the other side. Check on color!
